Personal Entry: Sunday, December 23

Hi All!

It's been a few months since my last update.  Real life decided to crap on me and my family once again.  My wonderful friend, [livejournal.com profile] lyricmaniac, as helped me through it all when we are able to talk to each other.  (Thanks for all the support, Lyric!)

For those that don't know: my mom fell outside in late October, and she fractured and dislocated her right ankle.  It's been a stressful two months with surgeries, infections, and a bunch of doctors' visits.  Her two doctors are hopeful now that her ankle will heal completely, but it will still take time for it to happen since she is diabetic, and there is also wound on that ankle too which was a result of the dislocation.

Also, in late November, my aunt (one of my mom's sisters) died.  We have been dealing with that loss too.  My uncle called my mom yesterday to tell her that he is going to Florida for the holidays.  I don't blame him since it took a toll on him dealing with my aunt's health for the last six months, and also losing her.  I really wish I could go with him.  I could use a vacation away too.

I'm having Christmas with my parents at the care facility that they are staying at.  I'll be making Christmas dinner for my mom and I.  My dad is unable swallow properly to eat so he will most likely go to watch us eat our food and wait to open presents afterward.  Since I'll be making Christmas dinner, I have a lot of things to do in the next day and a half to get it all done by the time I wish to eat on Tuesday.

If I feel like it or remember to do so, I will update again before the end of the year.

Personal Entry/Recipe: Wednesday, October 3








Do you, in the town or city you live in, hate driving?  I swear today was the most aggravating day I've had while driving in a long time.  All day, other drivers found some way to piss me off, and make me hate driving.  I'm just glad to be home, and I don't have to go anywhere tonight.

On a lighter note, here's a recipe my mom found today.  It's called Tomato Lentil Chili.  I don't know what it tastes like yet, but I'm making it for supper Monday night.  If you want a copy of it, you can find it here.

Tomato Lentil Chili








Ingredients:

2 Tbsp. canola oil
1 medium onion, chopped
1 medium red bell pepper, chopped
4 garlic cloves, minced
1 cup dry lentils (red or brown)
1/2 cup quick-cooking bulgur
2 (14 1/2 oz.) cans fat-free, reduced-sodium vegetable broth
1 1/2 cups water
1 (14 1/2 oz.) can petite diced tomatoes
2 Tbsp. chili powder
2 tsp. ground cumin
1 tsp. salt
ground black pepper to taste

Directions:

Heat oil in large saucepan.  Add onion, bell pepper, and garlic; cook 7 minutes.  Add remaining ingredients.  Simmer 30 minutes.

Personal Entry/Asking For Book Suggestions: Tuesday, October 2

It's been like two months since my last update.  I promised my friend I would try to update as often as possible, and I know I haven't.  Sorry about that.  I'll try once a month at the least.  Since the last update, there have not been much going on with my immediate family or me.  My parents are well, and I am well.  My cat, Knolls, was put on a diet for his weight about a month ago.  Let's just say, the transition to not being feed as much is not going well.  He seems to be hungry all the time still, and whinnier than before the diet.  It can be like a war at times between my mom and Knolls, especially when he wants his food.  Let's just say, Knolls gives my mom some bite/claw wound, and my mom yells bloody murder.  Enough said.

I started reading Breaking Dawn last week, and it'll take at least a month for me to finish it; I read one chapter a day while seeing my dad at the care facility that he is at.  I was hoping to get some book suggestions for when I do finish Breaking Dawn.  If you have any, please leave a comment.  NO E-BOOKS though, I don't own an e-book reader.  And if I don't get any, that's fine.  I have a book that I've had for many years that I could try to read; I haven't gotten past the first chapter yet, and it's suppose to be a really good fantasy book, too.

Another crappy Monday.  It's turned into one of those days that if something could go wrong, does go wrong.  At least, the wrongs do turn back into rights eventually.  I do get to watch the Olympics for the rest of the day.  That's the only good thing about today.

HAPPY BIRTHDAY TO ME!

If you haven't guessed yet, today's my birthday.  I want to take the time to thank the friends that have made birthday banners or posts today.  THANK YOU ALL!

I got a card from my parents and from my aunt.  My aunt sent $20 with hers.  I went to Target this afternoon and bought a $50 iTunes gift card for myself.  It's my parents' present to me.

I want to give extra thanks to Lyric for her virtual birthday cake.  THANK YOU MY DEAR!  It's the best virtual cake ever.  Here is a picture of it, and no, she didn't make it.  She found it on Google Images, so I don't know who actually did it, but it is brillant and beautiful non-the-less.



Two days ago, I finally finished Twilight.  I started it like a month ago.  It's an awesome book if you like to read about vampires.  Now I understand why so many teenage girls love the books.  New Moon is great too.  I'm in the middle of chapter 2 at the moment.  GO TEAM EDWARD!

Yesterday, I read a few ATWT fan fiction stories.  It's been a few months since the last time I read a story from that fandom.  I usually just read Hawaii Five-0 fan fiction now adays that it felt so nice to read about Luke and Reid again.  I miss the show and our boys so much still, and it's been off the air almost two years now in the USA.

That's about all I have for now.  My life isn't as interesting as I wish it was. Maybe tomorrow I'll have something interesting to tell.

Personal Entry: Monday, July 9 -- First One Ever

This is my first personal entry on my life ever on LJ. 

My friend and I were talking, a couple of nights ago, about how all we do on Facebook is chat about Sims Social anymore, and pretty much nothing else.  We've known each other through LJ, Pogo, and Facebook for at least nine months or so now.  And of course, she was right.  All we do is bitch about the game or ask for items through friend requests.  After she said this, she told me how she would like to have updates on my and my family's life on LJ, like she does with hers.  I told her that I would try, so here I am making my first entry.  Yay!

Well, yesterday, I went to the grocery store.  I bought a birthday cake for myself since my birthday is Thursday.  I'll be 31.  Anyways, when I got home, I told my mom about the birthday cake, and she totally asked me when my birthday was.  I told her it was Thursday, and she went on to say that there was no card for me since she forgot.  So I suggested I would get one at random at a store, but luckily, she found one on her own.  So she signs it and everything.  I go see my dad at the care facillity he is at.  Of course, he also forgot about my upcoming birthday.  He signs the card and puts it in the envelope as I go to his room to take care of things.  Okay, I say and hour or so, and when I'm leaving, I talk about the cake and my birthday.  He thought it was yesterday and says 'Happy Birthday'.  I tell him it is Thursday, and we laugh it off.

SEE LYRIC, I TOLD YOU THEY WOULD FORGET IF I DIDN'T REMIND THEM.  LOL!

Okay, this happened early this morning.  My mom wakes me up at around 3:45 AM and the TV is still on since I fell alsleep with it on.  I tell her I'm turning it off to finally go get some real sleep, but of course, she decides she needs to sit in the living room, and I can't get back to sleep.  I use the couch as my bed since my bed if full of my junk.  Anyways, my cat also has to wake up since it is almost four.  He is hungry like usual at this hour of the morning.  I decide go to my room to see if I could listen to some music on my portable CD player or my Walkman/radio since my iPod needs a charging and is out of commition, and hopefully, that will help me to fall alsleep again.  I look for my Walkman/radio, and find out that one of the batteries has exploded in the battery compartment, and it looks pretty bad since the casing lid is full of dried battery acid.  Well, I wasn't too happy about that, and hoped that it would still work after I change the batteries and clean it up some.  I did that this afternoon, and thank god, it still works.  I mostly use it for the radio.  It might be old school, but it still has it uses when the power goes out and you need a radio on.  Anyways, I use my CD player, and try to listen to the CD in it.  By now, my mom goes back to her bedroom and goes back to sleep.  My cat, on the other hand, as decided that I needed to stay up, and he's acting like the big shithead he is in the morning most days.  I'm pissed at this point.  I just want to listen to the CD and go back to sleep.  I can't, he won't let me.  He loves to torment me by playing this game where I chase him around the house at night to try and get him to lay with me and sleep.  Of course, I always fall for it because if I don't then he loves to use his claws to dig into the living room curtains.  We do this for like 45 minutes or so.  He does finally settle down somewhere on the hallway carpet, and I do finally get back to sleep, but without the music since by that point I didn't want to listen to it anymore.

So, my early morning sucked really bad.  I slept until 10 when my mom got up.  I decided to go to my room and finish a work in progress fan fiction story that I'm reading.  I read that until 11 when I get dressed and get lunch for myself since my mom made her own lunch today.

I played Sims Social for a while this afternoon, and shortly, I will go see my dad.  I'm tired, but in a good mood at the moment.  Hope it continues because the care facillity that my dad is at, the patients/residents can get on your nerves at times.

Dried Cherry-Apple Dressing








Dried Cherry-Apple Dressing


Prep: 30 minutes
Bake: 40 minutes
Serves: 12 (May cut recipe in half.)


Ingredients:

  • 1 cup chopped pecans pieces (Omit if you have nut allergies.)
  • Nonstick cooking spray
  • 4 Tbsp. unsalted butter or oil
  • 3 celery ribs, chopped (1 cup)
  • 2 garlic cloves, chopped
  • 1 Granny Smith apple, peeled and chopped (1 cup)
  • 1 medium onion, chopped (1 cup)
  • 28 oz. (3 ½ cups) less-sodium chicken broth or vegetable stock
  • ½ tsp. ground black pepper
  • 1 package (14 oz.) cubed herbed seasoned stuffing
  • 1 package (6 oz.) dried tart cherries (1 cup)
  • 1 Tbsp. chopped fresh sage leaves
  • 1 Tbsp. fresh thyme leaves


Directions:

  1. Preheat oven to 325°F.  Spread pecans on cookie sheet. Bake 10 to 12 minutes or until lightly browned and fragrant. Meanwhile, spray 13 x 9-inch glass or metal baking dish with nonstick cooking spray. In nonstick 12-inch skillet, melt butter (or put oil in) over medium heat. Add celery, garlic, apple, and onion and cook, covered, 10 minutes or until vegetables are tender, stirring occasionally. Stir in broth (or stock) and pepper, heat to boiling over medium-high heat; remove skillet from heat.
  2. In large bowl, toss vegetable mixture with dry stuffing, cherries, sage, thyme and pecans until stuffing is moist. Transfer stuffing mixture to prepared baking dish. Bake, uncovered, 40 to 45 minutes or until heated through and top is browned.
